De basis van kwaliteit: De Wijngaard<\/p>\n\n\n\n

The value of good grapes begins in the vineyard. In my experience, grape quality comes from a delicate balance: the vine needs to struggle a little to develop character and concentration. However,<\/strong> too fertile soil or too much water may increase yield, but the grapes lose quality. This is why grape quality and vineyard management are so important. For example,<\/strong> in drier regions, the soil needs to retain water, while in wetter climates, proper drainage is essential to avoid rot.<\/a> Every great wine starts with grapes that have been carefully nurtured and challenged by their environment. As the saying goes, \u201cYou can make bad wine from good grapes, but you can\u2019t make good wine from bad grapes.\u201d<\/p>\n\n\n\n

Every year, the vineyard produces slightly different grapes because of variations in weather, sun exposure, and temperature.\u00a0As a result,<\/strong>\u00a0the wine is never exactly the same, and it is the winemaker\u2019s job to work with nature to maintain balance. During my wine tastings, I guide guests through this journey, helping them understand why a wine is dry, why it has higher acidity, or why its body feels the way it does.\u00a0In this way,<\/strong>\u00a0by connecting the taste to the vineyard and the grape, wine tastings become more than a sensory experience. They become a lesson in nature, climate, and care.<\/p>\n\n\n\n

Terroir en onderwijs: Kwaliteit proeven<\/p>\n\n\n\n

Druivenkwaliteit en wijngaardbeheer gaan verder dan de bodem; ze omvatten het hele terroir: klimaat, helling en de zorg die in de wijngaard wordt besteed. Het beheren van het bladerdak, het controleren van de opbrengsten en het zorgvuldig controleren van de rijping dragen allemaal bij aan geconcentreerde, smaakvolle druiven. Elke wijn vertelt bijvoorbeeld het verhaal van zijn plaats: van vruchtbare valleibodems tot armere, steilere hellingen. Bourgondi\u00eb is een klassiek voorbeeld. Hier bepaalt de helling of de druiven een gewone AOC-wijn, een Premier Cru of een Grand Cru opleveren. Hogere, armere bodems leveren vaak kleinere druiven op met meer complexiteit en karakter. Dit illustreert duidelijk hoe de kwaliteit van de druiven en het beheer van de wijngaard de uiteindelijke wijn bepalen.<\/p>\n\n\n\n

Tijdens mijn wijnproeverijen benadruk ik altijd dit verband. Ik leg uit hoe zuurgraad, alcohol en body worden be\u00efnvloed door het klimaat en de oogsttijd, zodat proeven een manier wordt om de wijngaard te ervaren. Wijn is 50% wijngaard en 50% kelder; beide moeten in harmonie samenwerken. Als gevolg hiervan leren gasten door wijnproeverijen dat elke slok de zorg, aandacht en omgeving weerspiegelt die de wijn heeft voortgebracht. Goede wijn is nooit toevallig; het komt voort uit respect voor de druiven en de plek waar ze groeien.
